Muffin

Costco makes fantastic muffins.

35 frozen muffins are in our freezer.

If I quarter them and feed them to our babies in the morning with scrambled eggs, they will last 35 days.



. . . They are actually quite tasty frozen, and easy to cut into quarters.

. . . . . . If I eat one, I'll break my diet.

My Favorite Coffee

My favorite Coffee happens to be keto-friendly.

This recipe calls for:

  • Yummy black espresso
  • Stevia (I use 3 micro scoops of Better Stevia)
  • 2 tbsp Heavy Whipping Cream
  • Small amount of hot water

Destructions:
1. Put some hot water in your favorite non-burn-you mug
2. Put some stevia in your water. I use three of the tiny scoops included in Better Stevia.
3. Swish it around so the stevia disappears in the water.
4. Make your espresso, the way that you like best.
5. Put the espresso in your favorite non-burn-you mug with the stevia-hot water solution.
6. Add two delicious tablespoons of heavy whipping cream.
7. Smell it first. This is not really optional, because you'll regret it if you don't. Seriously. MmmmMMMmmmmm
8. Enjoy. No quotes today, just really, actually enjoy it.

Thankful Keto

Cheese Egg

Cheese Egg

This amazing recipe calls for:

4 Cheeses such as

  • Slice of Cheddar
  • Slice of Provolone
  • 3 oz Mozerella crumbles
  • And, a mini Babybel, cause, why not?
  • Butter, a little bit
Other Stuff we're using:
  • Non-stick pan. (If you have more than one, use a small one.)
  • Spatula that won't scratch up your non-stick pan
  • plate
  • fork
  • steak knife

Destructions:

1. Butter your pan! YUM
2. Put your cheeses down. Use a slice first. Trust me. Cheddar on the bottom tends to work best for us. Pile the other cheeses on as the last layer starts to melt into delicious cheese lava.
3. Break your egg and put the wet inside parts on the top of your cheese lava. Note: Throw the shell away! Don't cook it! Also, if bits of it do happen to get in, pick them up with the spatula, NOT your fingers. 
4. Let it cook at least until all the white stops being see-through
5. (optional) Let it cook until the yellow part is solid.
6. If you feel fancy, slide the egg off the side of the pan onto your plate. If your not being fancy, scoop it up with your spatula and just, you know, put it on the plate.
7. Eat with fork and steak knife.
